Description
Colby Half Loaf 2.5 lb Heritage: Cheesemakers first produced Colby, a close relative of Cheddar, in the central Wisconsin town of Colby in 1885. Similar in flavor to Cheddar, Colby is softer and has a more open texture and higher moisture content. Cheesemakers spray the curds with cold water and stir them while they are still in the vat to prevent the curds from knitting together. This procedure gives Colby a more elastic texture than Cheddar. Description: First produced in Colby, Wisconsin in 1885. Mild flavor similar to mild Cheddar. Firm, open texture with tiny holes. Slice for sandwiches; shred into casseroles; cube for snacks.

We recently found Widmer’s Cheese Cellars in searching for Colby cheese like we had fifty years ago. Widmer’s Colby Cheese is just what we have searched for, for many, many years. It has the taste and the texture that good Colby cheese should have. This is real Colby rather than Cheddar cheese with a Colby cheese label (what our stores carry). We live far away from Wisconsin but will now always order this cheese as a staple in our home! Thank you Widmer’s!

This is absolutely one of the best Colby’s out there as far as we’re concerned. We discovered it at Christmas(2016) —we no longer in live in WI–and had it sent. I just ordered it again…so that should speak volumes. I will continue to order this on an ongoing basis. Gotta have some REALLY GOOD WI cheese and this is one of them.

When I was very young, I wouldn’t eat cheese. ANY cheese. I must have gotten a taste of something sharp and decided that cheese was a terrible food. My Dad coaxed me to try Colby in sheets so thin, they’d practically melt on my tongue. Well, that was pretty good, and when Mom made “Grilled” Cheese Sandwiches, that I could carefully pull apart to see how far the cheese would stretch… well, I was hooked. I’ve been hooked ever since. I’ve come to enjoy many different cheeses since then. My favorite is is and always will be well-made Colby. Regrettably, I can’t get pure Colby where I live and I’ve had to make-do with Colby Jack. Discovering your Colby has brought joy into my life. Thank you!

The Colby cheese is so good that our 2 dogs and 1 cat crowd around me and my husband when We eat the cheese. After letting them try a sample, the animals darn near mugged us trying to get at the cheese!!! Every time either one of us open the refrigerator door, the animals try to get at the cheese!
